La historia, la geografía y los cruces entre diversas culturas, mundos y tiempos así como las religiones, creencias y tabúes configuran lo que somos y lo que comemos, convirtiendo nuestra gastronomía en un cubo de Rubik donde intervienen varios factores. A lo largo de este libro analizaremos determinadas recetas, recibidas por transmisión oral o escrita, y veremos los diversos procedimientos culinarios interpretando la terminología que contienen e identificado las tecnicas de elaboración que se deben aplicar. Además, veremos cómo realizar, poner a punto y conservar elaboraciones culinarias que resulten complejas y representativas por sus valores gastronómicos tipo, ya sea territoriales o temporales. Los contenidos se ajustan a los establecidos para la UF 0071 Cocina española e internacional, incardinada en el MF 0262_2 Productos culinarios y perteneciente al certificado de profesionalidad HOTR0408 Cocina, regulado por el RD 1376/2008, de 1 de agosto, y modificado por el RD 619/2013, de 2 de agosto.
